Prepare dough: Add flour, salt, and water gradually to form a soft dough. Knead for 3–4 minutes and rest for 20 minutes.

Prepare the filling: Grate the radish and squeeze out all excess water. (Do not skip — mooli releases a lot of moisture.)

Mix squeezed radish with green chillies, ginger, ajwain, roasted cumin powder, red chilli powder, garam masala, amchur, salt, and coriander.

Shape and fill: Roll a dough ball into a small disc. Add 2–3 tbsp mooli filling. Bring edges together, seal, and flatten.

Roll gently into a 6–7 inch paratha. Dust with flour lightly if needed.

Cook on a hot tava: Place paratha on the tava, flip when bubbles appear. Apply ghee and cook until golden spots form on both sides.

Serve hot with curd, pickle, butter, or chutney.

Always squeeze mooli well; excess water makes rolling difficult.
