Instructions

• 1 Make pasta dough: combine flour, eggs, and olive oil, knead until smooth. Rest 30 minutes.
• 2 Mix ricotta, parmesan, mozzarella, herbs, salt & pepper for the filling.
• 3 Roll dough thin, cut into squares, place filling in center, cover with another sheet, and seal edges.
• 4 Boil ravioli in salted water 3–4 minutes until they float. Drain gently.
• 5 For sauce: melt butter, sauté garlic, add tomato sauce (or use butter & sage). Simmer 5 minutes.
• 6 Toss ravioli in sauce and serve hot with parmesan garnish.
