Instructions

• 1 Heat butter in a pan, sauté onion and garlic until soft.
• 2 Add Arborio rice, stir for 1–2 minutes until lightly toasted.
• 3 Add warm broth one ladle at a time, stirring until absorbed before adding more.
• 4 Continue cooking 18–20 minutes until rice is creamy and tender.
• 5 Stir in parmesan and mozzarella until melted.
• 6 Season with salt and pepper, garnish with parsley, and serve hot.
