Ingredients
For Rice
- 2 cups basmati rice
- 4 cups water
- 2 bay leaves
- 4 green cardamom pods
- 4 cloves
- 1-inch cinnamon stick
- Salt to taste
- 2 cups mixed vegetables (carrot, beans, peas, cauliflower)
- 2 large onions, thinly sliced
- 3 tbsp oil
- 2 tbsp ghee
- 2 tbsp ginger-garlic paste
- 2 green chillies, slit
- 1 cup thick curd
- ½ tsp turmeric powder
- 1½ tsp red chilli powder
- 2 tsp coriander powder
- 1 tsp garam masala
- Salt to taste
- ½ cup fried onions (birista)
- ¼ cup chopped mint leaves
- ¼ cup chopped coriander leaves
- ¼ cup saffron milk or warm milk
- 2 tbsp ghee
Instructions
- Prepare Ingredients: Wash and soak basmati rice for 30 minutes. Chop vegetables and keep herbs ready.
- Cook the Rice: Boil water with whole spices and salt. Add rice and cook until 70% done. Drain immediately.
- Fry Onions: Heat oil and fry sliced onions until golden brown. Remove half for layering.
- Prepare Vegetable Masala: In remaining oil, add ginger-garlic paste, green chillies, spices, curd, and vegetables. Cook until vegetables are semi-tender.
- First Layer: Spread vegetable masala evenly at the bottom of a heavy pot.
- Second Layer: Add a layer of rice over masala, followed by fried onions, mint, coriander, and ghee.
- Dum Cooking: Repeat layers, drizzle saffron milk, seal the pot, and cook on low heat for 20 minutes.
- Rest & Serve: Let biryani rest for 10 minutes, gently fluff, and serve hot.
