Instructions
- 1 Mix cornflour, maida, red chilli powder, black pepper, salt, and water to form a medium-thick batter. Coat baby corn pieces evenly.
- 2 Heat oil in a deep pan and fry the baby corn till crisp and golden. Drain on paper towels.
- 3 Heat 2 tbsp oil in a wok. Add chopped garlic, ginger, green chillies, and dry red chillies. Sauté until aromatic.
- 4 Add soy sauce, red chilli sauce, tomato ketchup, vinegar, and a pinch of salt. Stir well.
- 5 Toss in the fried baby corn and coat quickly on high flame so they stay crisp.
- 6 Finish with chopped spring onions. Serve hot and enjoy with fried rice or noodles.
