Kuttu Ka Paratha is a wholesome and filling flatbread made with buckwheat flour, perfect for fasting days like Navratri. Soft, earthy, and nutritious, these parathas pair wonderfully with vrat-friendly curries, yogurt, or aloo sabzi.

Instructions
1
In a mixing bowl, combine kuttu flour, mashed potatoes, rock salt, green chilies, coriander leaves, and cumin powder.
2
Knead into a soft dough using little water if required. Rest for 10 minutes.
3
Divide the dough into equal portions. Roll each into a ball and gently flatten into parathas using a rolling pin (dust with more flour if sticky).
4
Heat a tawa or skillet. Place the paratha and cook on medium flame, applying ghee on both sides until golden spots appear.
5
Repeat with remaining dough. Serve hot with vrat aloo sabzi, curd, or vrat chutney.
