Sama Rice with Kadhi

Instructions
- 1 Whisk yogurt with singhare/rajgira flour, rock salt, and 2 cups water until smooth.
- 2 Heat ghee in a pan. Add cumin seeds, ginger, and green chilies. Sauté briefly.
- 3 Lower flame and add yogurt mixture, stirring continuously to avoid curdling.
- 4 Simmer on low flame for 8–10 minutes until kadhi thickens slightly. Adjust consistency with hot water if needed.
- 5 Meanwhile, rinse sama rice and cook with water and rock salt until soft and fluffy (about 12–15 minutes).
- 6 Serve hot kadhi with sama rice, garnished with a drizzle of ghee and fresh coriander.
