Instructions
1 In a large pot, heat sesame oil. Add garlic and ginger, sauté for 1–2 minutes until fragrant.
2 Pour in chicken or vegetable stock, soy sauce, and bring to a simmer. Let it cook for 15 minutes.
3 Meanwhile, cook ramen noodles according to package instructions. Drain and set aside.
4 Prepare soft-boiled eggs (boil for 6 minutes, cool, peel, and halve).
5 Add spinach (or bok choy) and corn into the broth, simmer for 2 minutes.
6 To assemble: Divide noodles into bowls. Pour hot broth over noodles.
7 Top with chicken or tofu, soft-boiled egg halves, spring onions, and nori.
8 Serve hot, with extra soy sauce or chili oil on the side.
